Lavender Vanilla Protein Balls
Protein snacks are the perfect snack to have mid-afternoon when you feel your energy starting to slump. I’ve used Vanilla protein powder but you could also substitute with Cacao flavoured and have Lavender Cacao Protein Balls. These are yummy so the trick is to only eat 1 or 2. 🙂
Ingredients:
1 cup Cashews
1 cup Medjool, pitted dates
1 scoop of Vanilla Protein Powder (I use Balance 100% Whey)
¼ teaspoon of lavender flowers from Inspired Health by Dee Calm Tea
Dessicated coconut, for coating
Method:
Soak the dates in boiling water, for at least 10 minutes. Add the cashews to your Nutribullet and blend until fine. Drain the dates and add them the food processor with the cashews. Mix until they break down, combine and then start to clump together.
Then add in the protein and lavender flowers and mix until it starts to get crumbly.
Make them into small balls and coat with the coconut.
Refrigerate for 30 minutes. Enjoy.
